Leftover Turkey Soup

Leftover Turkey Soup (Crockpot)

  • 2 Cups Water or Chicken Broth, or Make your own from boiling a turkey carcass and skimming the fat
  • 10-12 oz leftover turkey breast
  • 1 Large Onion
  • 3 Celery Sticks
  • 2 cups chopped tomatoes
  • 2 Tsp minced garlic
  • 1/2 pkg frozen chopped spinach, thawed and drained
  • 1 Tbs chopped parsley
  • 1/8 teas. Marjoram
  • 1 bay leaf
  • 1/8 teas. poultry seasoning
  • 1/8 teas. savory or thyme

Combine all ingredients except parsley (if using fresh) and Spinach in crock pot. Cook all day on low heat. 1 hour before serving, add spinach and fresh parsley. Salt and pepper to taste.

I had this last night because I knew I was going to be too busy to cook and it was super tasty. I made some rice on the side for my husband. He thought it was bland and I can’t see how! I found it super flavorful. I told him that his taste buds are fried from eating so much crap all the time! LOL
