Frittata
- 16oz of vegetables, steamed (broccoli, spinach, whatever)
- ½ Onion, diced
- Handful of sliced mushrooms
- 8 Eggs
- 1 Cup Milk
- 3 oz parmesan cheese
- 2 Cups Mozzarella
- Salt, pepper and basil to taste
Preheat oven to 350 degrees
Sautee onions and mushrooms in some butter until they are tender – not brown.
While those are sautéing I beat up 8 eggs and add a cup of milk to it and about 3 oz of parmesan cheese along with some salt/pepper and some basil.
After the veggies are steamed and sautéed then I spray a 13 x 9 baking dish with Olive Oil Pam and put the veggies on the bottom making it kinda even.
I then pour over the egg/cheese/spices/milk mixture that I beat up and squish it around to make sure it coats over all the veggies.
I then sprinkle 2 handfuls of mozzarella cheese over the top.
Bake, uncovered in a moderate oven for about 20 minutes. The eggs should NOT be all the way set. I then switch my oven over to BROIL and watch closely until the cheese starts to bubble (like a pizza).
Remove and cool and cut into serving squares. Put them in individual sandwich bags and freeze.
You can add anything else you want in it – I love spinach also.
