Roasted Veggie (P3) & Potatoes (P4)

ROASTED VEGETABLES

(Omit potatoes for P3)

  • 1 medium purple onion
  • 1 lb. asparagus
  • 1 lb. mushrooms, any variety
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 2 medium tomatoes, seeded
  • 2 Yukon Gold Potatoes (Omit if on P3)
  • 1 zucchini
  • 1 yellow squash
  • Olive oil
  • Salt and pepper

*Adjust amount of ingredients as needed to feed your family*

Preheat oven to 350 degrees.

Wash and chop veggies in big(ish) but bite sized pieces. Add all veggies to a bowl. Drizzle with olive oil and salt/pepper. Use a spatula to thoroughly coat veggies.

Spread veggies into a shallow baking dish. Bake uncovered until veggies are crunchy tender. Serve hot! Enjoy!
